Gale Smith Wise

Gale runs a Fish & Fries food truck, so when she opened Wise Prep Commissary in January, she wasn't building a commissary from a business plan on a napkin. She was building the space she wished she'd had back when she was getting started.

Kitchen space is the hardest part for new food entrepreneurs. Commercial kitchens cost too much. Renting time-share space often means inconsistent access, no place to park, and paperwork nobody explains.

Gale built Wise Prep Commissary to fix that. An affordable, flexible kitchen, on-site truck parking, disposal included, and someone here who has actually been on the vendor side of the counter.

$175/month flat, the same rate for everyone, with no negotiation and no tiers. New vendors shouldn't need to choose between rent and a permit.

Built around how vendors actually work.

Prep doesn't happen 9-to-5. Member access is set up so you can run your real schedule, not ours. Tours, meetings, and hourly bookings are by appointment.
